Frosted Ricotta Cheese Cookies and Christmas Treats

Around the holidays I like to give homemade treats and gifts that people can really use.  My favorite cookies to share are my friend, Leigh's, family recipe for ricotta cheese cookies.  She brought them to a Christmas party years ago, and I simply could not stop eating them.  I know my cookies, and these are the best!  The other items I've noted are some of my favorite goodies that would make great gifts.  Tis the season for giving!

Frosted Ricotta Cheese Cookies



Plenty to share with friends!

2 sticks butter
2 cups sugar
1 15 ounce container of ricotta cheese
2 eggs, beaten
2 teaspoons vanilla
4 cups flour
1 teaspoon salt
1 teaspoon baking soda

Directions:

Preheat oven to 350 degrees.  Blend butter, sugar and cheese.  Add eggs and vanilla.  Mix in salt and baking soda and flour (1 cup at a time).  Drop on cookie sheet lined with parchment paper, 12-15 minutes or until golden.


Frosting

1 pound powdered sugar
1/2 cup softened butter
1 teaspoon vanilla
3 tablespoons milk

Directions:

Beat ingredients together.  Add more milk if needed for spreading consistency.  Frost cooled cookies. 

Makes 6 dozen cookies.
